Makes 1 large mason jar

1 kilogram large green mangoes, peeled and sliced
1/2 cup water
sugar (equal to weight of mango pulp)
juice from 1 lemon
green or yellow food coloring

1 Place the mango slices and water in a heavy-bottomed pan. Add sugar. Bring to a boil. Cook uncovered until it thickens, stirring constantly, about 25 minutes. Remove from heat.
2 Add lemon juice and about 6 drops of food coloring. Mix well. Return to fire. Bring to a boil and cook until a set is obtained (when the mixture has reached the thickness and consistency of jam), about 20 minutes. Cool.
3 Pour into jars and seal.
Storing tip: If you use sterilized jars, you can keep the jam at room temperature for up to a
year. If stored in unsterilized containers, it will keep for a month in the refrigerator.
