Pasta with Lucban Longganisa Toppings

The Lucban Longganisa is typically paired with garlic rice, sunny-side-up eggs and tomatoes on the side or atchara (pickled garnish famous in the Philippines), a native vinegar with garlic and pepper can be prepared as a complimentary condiment.

Since I love pasta, I would love to share a simple recipe of my Pasta Ala Lucban Longganisa! :)

Ingredients:

1/2 kg spaghetti pasta
12 pcs longanisang lucban
2 tbsp olive oil
salt pepper and Parmesan to taste

Procedure:

Cook spaghetti according to the package
Make a horizontal cut on the longganisa, making sure that it’s just deep enough to open it flat and not slice it into half

Pour a cup of water into the pan, put the longganisang lucban and let simmer until it’s red oil and meat comes off the skin
Remove the skin when water has evaporated and fry/roast the meat using its own oil

When the longganisa meat is slightly roasted, add two tablespoons of olive oil and mix in the cooked pasta.

Add salt pepper and Parmesan to taste and serve
